We have partnered with Angie Oliveras, a Kauai-based private chef, to share a vegan recipe guaranteed to wow guests at your next holiday party. Plus, we're sharing a few tips to transform your kitchen into a sanctuary this season.
Meet the Chef

Angie Oliveras is a talented Kauai-based private chef. Her culinary journey began in childhood when she found a passion for cooking while preparing meals for her family. After high school, Angie worked as a nanny, where her talent for cooking caught the attention of one family, who encouraged her to pursue a career as a chef.
She took their advice and is now preparing to launch her website and begin hosting private events across the Garden Island. We are excited to see where this journey takes her and are honored to have her join us in the kitchen. Below, she shares her recipe for 'Golden Cauliflower Steak,' which features a few ingredients from Hunter Gatherer.

Golden Cauliflower Steaks with Chimichurri Glaze

Ingredients List
Produce:
- One head of cauliflower
- Five large carrots
- One poblano pepper
- One bell pepper
- One leek
- Two cloves of garlic
- One bunch of parsley
- One bunch of cilantro
- One lemon
Pantry staples:
- Red wine vinegar
- Graza "Drizzle" Oil
- Graza "Sizzle" Oil
- Momofuku Chili Crunch
- Veggie broth (optional)
Spices & Seasonings:
- Salt
- Black pepper
- Italian seasoning
- Garlic powder
- Ground cumin
- Paprika

Directions
Step 1
Begin boiling a large pot of water. While it is heating up, prepare your carrots by cutting them into 1 to 1 1/2-inch pieces. Set them to the side.
Step 2
Slice the cauliflower into thick and sturdy steaks. Set them to the side.
Note: If they're too thin, they may crumble.
Step 3
Chop the leeks into 1-inch-thick pieces. Stop cutting once you reach the green portion of the leek. Don't worry if they fall apart; that is normal. Set them to the side.
Step 4
The water should be boiling by now. Add the sliced carrots to the pot and cook for twenty minutes.
Step 5
While the carrots are boiling, begin preparing the spice mixture for the cauliflower steaks. Add 1/2 cup of 'Sizzle' Graza Oil as the base. Next, add an equal amount of cumin and paprika to create a thin layer over the oil. Then, add 1/2 tablespoon of garlic powder, 1/2 tablespoon of Italian seasoning, black pepper, and salt to taste. Mix all the spices and oil together.
Step 6
Heat a pan over medium-high heat and add plenty of 'Sizzle' Oil to cover the bottom. Add the first cauliflower steak to the pan and baste 10–15 times. It's done when the steak is dark golden brown and tender in the middle.
Note: Use more 'Sizzle' Oil than you might assume. Basting means spooning the oil over the cauliflower continuously.
Step 7
Season the leeks by coating them with garlic powder, black pepper, Italian seasoning, and salt to taste.
Step 8
Set the leeks aside momentarily, as the carrots should be ready. Remove them from the burner and let them cool for 10 to 15 minutes.
Step 9
While the carrots are cooling, it's time to cook the leeks. Add oil to the pan and set it to medium-high heat. Cook the leeks until the edges turn golden brown.
Step 10
Now that the carrots have cooled add them to the blender with approximately 1/4 cup of 'Drizzle' Oil. Add Italian seasoning, garlic powder, and salt to taste, starting with a light hand, as you can always add more but can't remove it. If the carrots struggle to blend, add a bit of vegetable broth. Blend until the mixture is smooth and textureless.
Step 11
The final step is to prepare the chimichurri glaze. Add parsley, cilantro, salt, black pepper, lemon, poblano pepper, bell pepper, two cloves of garlic, and 1/4 cup of red wine vinegar to the blender. Blend until smooth.
Step 12
Finally, plate your meal. The carrot puree goes on the bottom, with the cauliflower steak atop it. Garnish with leeks, chimichurri sauce, and Momofuku Chili Oil.
